Location : a blend of grapes from plots around the village of Maimbray
Harvest : the grapes are handpicked in small crates and sorted before being transferred to tanks.
Vinification
No sulfites or other additives are
used out of utmost respect for our grapes. After being transferred to tanks,
maceration lasts a good 3 weeks. We intervene very little and perform only a
few gentle pump-overs during alcoholic fermentation.
Ageing
Aged for a total of 18 months of which 12 months takes
place in various types of vessels- wooden vats, concrete eggs and both 500 and
228-litre barrels without the addition of sulfur. The wine is racked and blended
after 12 months, then is aged for another 6 months in tanks. The wine is bottled
without being fined or filtered.
Tasting notes
The nose is intense and redolent of red berries. The palate is
generous and silky, boasting well-integrated tannins. It is supported by freshness
that typical of the Sancerre region and makes our Pinot Noirs stand out.
