

La Montée de Saint Romble
The grapes grow on the north slope of Maimbray, whose soil is rich in fossilized Kimmeridgian shells. This terroir shows strong potential for the future as it is well adapted for producing balanced wines in hot vintages.

Pressing
Long and gentle, lasting 3½ hours, to delicately extract the juice to
avoid any vegetal flavours.
Vinification
No added enzymes or sulfites. Racking after 48 hours of
cold stabilization. Alcoholic fermentation relies on indigenous yeasts and takes
place in oak casks, 600-L barrels and amphoras.
Ageing
Aged for a total of 18
months of which 12 months takes place in casks, 600-L barrels and amphoras.
After racking, the wine is blended and aged for another 6 months in tanks. The
wine is bottled in the spring on a fruit day with no fining or filtering.
Tasting notes
Montée de Saint Romble may be the estate’s
most straightforward cuvée, but with a little patience, it will express real emotion.
It always features perfect balance, even in «solar» vintages due to the slope’s
northern exposure.
